This is an absolute favourite of mine when I fancy a good hearty breakfast. I have never been a full cooked breakfast kind of person, but we all fancy a sausage from time-to-time, especially a caramelised onion one. Serve it with some fresh crusty bread and butter and you're onto a winner.

Ingredients:
- 3 Caramelised Onion Sausages
- 7 ish Baby Potatoes
- 1 Onion
- 2 Garlic cloves
- Handful of Mushrooms
- 4 Eggs
- Mozzarella
- Thyme
- Pinch of Zataar
To serve:
- Fresh bread and butter
Instructions:
- Start by cutting the new potatoes in half and putting them onto boil until softened (~ 7 minutes).
- Meanwhile, slice up an onion and get that frying low and slow (skillets are optimal for this recipe, but a frying pan works just as well) with a knob of butter, throwing in some diced garlic.
- Remove the skin from the sausage and throw in the frying pan, mixing occasionally.
- Once the potatoes are cooked, drain and throw in the skillet/ frying pan, with a pinch of salt, pepper, chopped thyme and zataar. Don't stir too much, as you want the potatoes to begin catching and crisping up.
- Dice up the mushrooms and throw in once the potatoes begin browning.
- Turn the grill on to heat up, and add a little boiling water to deglaze the pan.
- Make mini wells in the pan and crack the eggs into them.
- Pull apart the mozzarella and scatter over, seasoning generously.
- Turn off the heat from under the pan and place under the grill, leaving the door slightly ajar for about 5ish minutes, checking regularly. You are looking for a golden top, with a little wobble still in the eggs. (TIP - the eggs will continue cooking when you remove from under the grill, so if you're anything like me and want to dip your bread in, take them out when they still look slightly underdone.)
Serving Note: Serve with fresh bread and butter, and a nice bucket of coffee. Perfect for a Sunday morning with a bit of Amy Winehouse playing.
