The Ultimate Halloumi Burger

It's always good to mix those burger cravings up wth some veggie burgers, and this recipe really does not disappoint. Big, juicy and meaty, everything a burger should be, even those that are veggie. Only problem with this is it can get very messy eating it, so not a first date meal...

Serves: 2

Cooking time: 30 minutes

Ingredients:

  • 170g Halloumi
  • 1 tsp Honey
  • 2 Field Mushrooms
  • 1 Red Pepper
  • 1/2 Onion
  • 1 tsp Brown Sugar
  • Handful of Rocket
  • Mayonnaise
  • Red sauce of choice (ketchup/tomato chutney/ sweet chilli sauce)
  • 2 Brioche Buns
  • Olive oil

Instructions:

  1. Preheat your oven to 180℃.
  2. Prepare the mushrooms by placing them on a baking tray, drizzling with oil, and generously seasoning. Put them in the oven to roast for 20 minutes.
  3. Slice the onions into half moons and caramelise on a low heat, adding the brown sugar to really bring out the sweetness and cooking them low and slow for about 15 minutes.
  4. Grill or use the fire on a gas hob to char the red pepper for 5 minutes.
  5. Add these to the tray to roast in the oven with the mushrooms.
  6. Heat a frying pan up and toast the brioche buns.
  7. Next, fry the halloumi slices until they begin to golden. Turn the heat off and drizzle with they honey for a touch of sweetness.
  8. Once all of the components are ready, get ready to assemble.
  9. Layer the bun starting with mayo, then add the rocket followed by the roasted mushroom, the halloumi. Use the red pepper to hold the caramelised onions and sauce the lid to your liking.

Serving note: Serve with either a salad or some curly fries depending how good you are being, always with an ice cold beer and listening to some Otis Redding.
